Poolside Drinks for Date Night

The sun is starting to head for the horizon, but the heat of the day lingers as you and that special someone make plans to enjoy an evening by your backyard swimming pool. Rather than settling for your “go to” adult beverage, you might consider trying something new to make this date night more memorable.

Here are five recipes for delicious and refreshing summertime cocktails that will earn you a reputation as a master mixologist.

Mai Tai

For many people, this delicious drink screams “tropical vacation!” But you can have it anytime.

1 oz. light rum
1/2 oz. crème de almond
1/2 oz. triple sec
sweet and sour mix
pineapple juice
1/2 oz. dark rum


Into a Collins glass pour light rum, crème de almond, and triple sec. Nearly fill with equal parts of pineapple juice and sweet and sour mix. Add dark rum and serve immediately, unstirred, with a straw.

Cucumber margarita

Crisp and refreshing, this new take on the classic is tasty and easy to make.

Salt, for rimming the glass
2 1/2 oz. cucumber-infused tequila
1 oz. fresh lime juice
1 oz. simple syrup (equal parts water and sugar brought to a boil, stirred, then cooled)
1 cucumber slice, for garnish

Wet the rim of an old-fashioned or margarita glass, dip it in salt and let stand until dry. Fill the glass and a cocktail shaker with ice. Add the cucumber-infused tequila, lime juice, and simple syrup and shake until well chilled. Strain the cocktail into the rimmed glass and garnish with the cucumber slice.

Singapore Sling

This gin drink was reportedly developed in the early 1900s. It’s been a favorite of travelers to tropical destinations ever since.

1/2 oz. grenadine syrup
1 oz. gin
sweet and sour mix
1/2 oz. cherry brandy
club soda

Pour grenadine into the bottom of a Collins glass, then fill with ice. Add gin and equal parts of sweet and sour and chilled club soda. Top with cherry brandy and serve unstirred with a cherry garnished.


The key to this citrus sensation is to gently press the mint leaves to release their oils without thoroughly crushing them, which can lead to a bitter taste.

A few fresh mint sprigs
1 oz. freshly squeezed lime juice
1 oz. simple syrup (equal parts water and sugar brought to a boil, stirred, then cooled)
2 oz. white rum
1 1/2 oz. chilled club soda

Add two sprigs of mint, lime juice, and simple syrup to a cocktail shaker and gently press the mint against the bottom with a spoon or muddler to release the oils. Add the rum and some ice and shake vigorously for 20-30 seconds to chill the mixture. Strain the drink into a 10-ounce glass filled with ice. Add a splash of club soda and garnish with another mint sprig.

Peach Bellini

Nothing says summer refreshment like peaches!

2 medium sized peaches, peeled and diced
1/2 cup water
1 teaspoon lemon juice
Pinch of sugar
1 bottle Prosecco, dry sparkling wine, or champagne

Add peaches, water, lemon juice, and sugar to a blender and process until smooth. Pour the puree into a champagne flute to about a quarter full. Top with Prosecco, sparkling wine, or champagne.
